I love these beetroot, with their candy striped insides. I was asked to cook on two days for a family from the USA and, after a European tapas feast on their arrival night, wanted the second meal to have some quirky, fabulous tasting organic British veg alongside the beef and creamy potatoes. So I brought pink beetroot – plus both purple and yellow carrots – through the rain and thunderstorms to @carrhallcastle near Halifax. Finished with a drizzle of English blossom honey, cooler temperatures and Pennine rain definitely call for roasted root veg!
