My Japanese knife often gets admired and discussed when people spot it being used. I still keep it in its original (oft-repaired) box and take it everywhere with me. This single knife replaced three others and receives regular TLC from Gaz and George at Community Cutllery in Ilkley – sharpened on a whetstone, oiled and looking like new.
