Strawberry pavlovas, made with the first of this year’s summer strawberries, whipped cream, freshly made strawberry and vanilla coulis, generously proportioned meringue nests (or ‘meringue baskets’ as they were nicknamed at the table tonight), mint leaves and a dusting of icing sugar.
