Collecting freshly prepared meats first thing in the morning from my local butcher. Nathan is supplied by local farms around Barnoldswick in Airedale, Wharfedale and Nidderdale – near places like Skipton, Ilkley and Pateley Bridge – along with butter from Grassington and cheeses from Garstang. There’s a lot of pride in the quality, and care taken in the preparation, of the meat here – I always get fabulous feedback from diners.
