Beef short ribs, freshly seared in the pan, ready to slow cook in red wine for several hours. Collected from our local butcher who prepared them as I waited in the morning, these are sourced from local Yorkshire Dales farms around Skipton, Ilkley and Pateley Bridge: Airedale, Wharfedale and Nidderdale.
