Young bay leaves

Young bay leaves are great for finely chopping and sprinkling over squashes, alongside other herbs like rosemary and sage (especially when you’re roasting veg, the last thing you want is shards of hard bay leaf that refuse to give). I grow them in my organic garden so that I can pick fresh leaves just before heading out to cook.
