Lemon cheesecakes: sweet crushed buttery biscuit base, then marscapone cheese and whipped double cream infused with lemon peel, juice and topped with lemon cheese, plus a few blackberries on the side.
Spent this evening cooking surrounded by handwritten notes and rules from the holiday cottage owner warning of consequences for any misdemeanours. As always, I left the kitchen cleaned and tidied so that’s one less thing for tonight’s guests to worry about whilst minding their heads, not breaking the cafetiere, resetting the electrics, minding the tap etc etc.
