A lovely review from a meal I cooked in Swaledale, in the Yorkshire Dales National Park. Fillet steak beef wellington filled with caramelised red onions, port and proscuitto was on the menu that night, served with all the trimmings and a creamy Welsh organic blue cheese sauce.
