School summer holiday baking! We ran out of muffin cases so resorted to IKEA coffee mugs. I couldn’t get a straight answer out of the tinterweb but it looks like, yes, their mugs are oven-proof – for a spot of gentle baking at least. I’ve been mulling over doing individual crumbles in this size mug (instead of constantly apologising to diners about the state of their ‘school dinner style’ pudding), so it was a perfect baking emergency to spur me on. They’re vegan walnut-topped apple muffins by the way, made with banana instead of egg. Both daughters had them whipped off the cooling rack before you could say “what, pudding before tea?!”.
