This is ‘Hen of the Woods’ from our local organic greengrocers @steepandfilter in Skipton (with a colourful backdrop of January King cabbage) – on the menu tonight with pan fried duck breast, roasted Jerusalem artichoke and aubergine halves, shredded roasted Brussels sprouts, Dauphonoise potatoes, red wine jus and smoked pancetta.
